Isso que está na foto acima é uma raridade. Trata-se de um dos mais finos malt whiskies existentes, o Bruichladdich em uma série especial, envelhecida em barris em que, anteriormente, curtiu-se o vinho de Jerez do produtor Fernando de Castilla. E é uma exclusividade do Esplanada Grill.
Batizada de Sherry Special, essa tiragem de bela garrafa azul ganha complexidade e o toque abaunilhado da bebida espanhola, que enriquece a o já elegante aroma floral do malte da destilaria escocesa e de seu uísque de 12 anos (reais) de envelhecimento.
Poente de inverno é a poética denominação que a cor do uísque ganha de Jim McEwan, o responsável pelo preparo da bebida.
Bruichladdich -pronuncia-se “bruc ladi” e significa “litoral pedregoso”. É um dos mais finos exemplares daquilo que é conhecido como Islay whisky, ou seja, o uísque produzido com a água puríssima do sul da ilha de Islay, localizada ao largo do litoral oeste da Escócia.
A destilaria foi fundada há 130 anos e ainda mantém os equipamentos da era vitoriana, em que foram instalados.
Islay (“a ilha”, em dialeto gaélico) cobre pouco menos da metade da área da cidade de São Paulo – sem adjacências -, mas conta com um complexo de outras distilarias nobres – Ardbeg, Caol Ila, Bowmore, Bunnahabhain, Lagavulin e Laphroaig – que ganham notas minerais especialmente apreciadas por quem degusta uísque, como iodo, turfa e alcatrão.

You’re absolutely right about the aroma of the wort. It’s prrmiaily grainy/earthy with hints of fruit as the sugars are being extracted. I enjoyed hovering over the mash tun and letting the steam and aroma cover me: a free whisky spa treatment! The rich fruitiness, for me, really comes to the forefront during the fermentation process. On an important side note, the aromas you get are significantly dependent upon the grain used. In the case of the wort I worked on, it was lightly peated Islay barley. A heavily peated barley grown on the mainland would have some different characteristics, both in the mashing and fermentation processes.
